Wow! Too many science geeks in my life! In the last hour I have received six, SIX emails about evaporation, a couple of which also bitched about my stultifyingly usual imprecision. [They're all men.] The essence of steam is evaporation. So steam is an evaporative thing. And while, yes, steam goes both ways, liquid evaporating or steam condensing, yer too freakin' stuck on this shit. I'd made up the damn word in my sleep, and then used it to express the transitioning of steam at all... and, here:
evaporate |iˈvapəˌrāt| verb turn from liquid into vapor : [ intrans. ] cook until most of the liquid has evaporated | [ trans. ] this gets the oil hot enough to evaporate any moisture. • lose or cause to lose moisture or solvent as vapor : [ trans. ] the solution was evaporated to dryness. • [ intrans. ] (of something abstract) cease to exist : the militancy of earlier years had evaporated in the wake of defeat.

And, sheesh, you wouldn't believe what I've gone through to be precise for you now.
